Candied root vegetable bake!

Looking for a sweet side dish to accompany a savory steak? Or maybe you just want some comfort food you can feel good about. Well, whatever the reason, look no further! This root vegetable bake is here to satisfy all your senses!


The bake consists of naturally sweet vegetables like beets, carrots, and Japanese sweet potatoes. When baking these root veggies alone you’ll notice they take on a sweet taste and candied texture, but TOGETHER, oh boy that’s a different story! With a balanced crunch of the pecans, I think you’ll find yourself swept away into a land of yummy goodness.



Foodstuff-

Japanese sweet potatoes (2)

Soup carrots (4)

Beets (5-6 medium)

Red onion (1 medium)

Coconut oil (2 tbsp)

Pecans (½ cup)

Cinnamon (½ tbsp)

Dash of salt


Methods- chop all veggies, throw 'em on a cookie sheet, drizzle with coconut oil, sprinkle cinnamon and pecans on top, bake at 400*F for 50 mins to 1 hour. That's it! Told you my recipes were easy ;)
