Coconut oatmeal fig chocolate chip cookies

Who says ya can't have your cookies and eat 'em too?? 🍪


If you're going to have a cookie, why not make it one you can feel good about?!


Sweets are one of the many things in life that grant us instant satisfaction. An escape from reality. Sweets are nostalgic brief moments of absolute pleasure!


But sweets doesn't have to equal sugar!


We can get that same sweet satisfaction without adding copious amounts of refined sugar! Just takes a little creativity to work around it!


Natural sugars like honey 🍯, coconut sugar 🥥, maple syrup 🍁, and monk fruit are less damaging to our bodies than refined sugar (cane sugar, white sugar, brown sugar).


Don't mistake this for permission to eat sweets containing these sweeteners all the time!! That's not the takeaway here!


The takeaway is, if you're craving something to satisfy your sweet tooth try baking with these sweeteners instead of pure cane sugar!


Substituting the natural sweeteners listed above for sugar isn't 1:1 so make sure to look up conversions so you get the sweetness level just right!



Coconut oatmeal fig chocolate chip cookies


Foodstuff:

¾ cup oats

¼ cup coconut flour

2 eggs

¼ cup of grass-fed Nellie's Free Range organic butter

½ tsp vanilla extract

¼ cup Lakanto sugar free keto maple syrup (made w/ monkfruit)

¼ tap baking soda

¼ tsp sea salt

⅓ cup Trader Joe's 72% dark chocolate bar chopped into chips

5 dried golden California figs, chopped


Methods:

Preheat oven to 350*F

Melt butter and mix together coconut flour, oats, maple syrup, and butter.

Add eggs, vanilla extract, baking soda, and salt. Mix together thoroughly until all ingredients are blended equally thought the batter.

Add chocolate chips and fig chunks into batter and mix.

Scoop dough into cookies 1 inch in diameter, place on a greased cookie sheet. You should yield about 12 cookies.

Press cookies down slightly. Coconut flour doesn't rise or spread like wheat flour so the cookie will take on whatever shape you make it into.

Bake for 15-20 minutes.
